This recipe is so easy that anyone can make it. No much hassle, no need to sweat for hours in the kitchen. Let us know the easy recipe of this instant Shahi Paneer Kheer:

Ingredients:

  • Milk: 1 liter (full cream)
  • Cheese: 200 grams (fresh, grated or crumbled into small pieces)
  • Sugar: 1/2 cup (or more/less as per your taste)
  • cardamom powder: 1/2 tsp
  • Saffron threads: 8-10 (soak in 2 tbsp warm milk)
  • Mix Dry Fruits: 2 tbsp (cashews, almonds, pistachios – finely chopped)
  • Desi Ghee: 1 tsp (for frying cheese, optional)

Easy method to make Paneer Kheer (How to make Paneer Kheer at home):

  1. Boil milk: First of all, keep the milk boiling in a heavy bottom pan or pot. Let it cook slowly on low flame and keep stirring in between, so that the milk does not burn and curdles on the sides.
  2. Prepare Paneer: While the milk is cooking, grate the cheese well or break it into small pieces with your hands. If you want, you can also heat 1 teaspoon desi ghee in a small pan and fry the paneer until it becomes light golden. This further enhances the taste of cheese. If you do not want to use ghee, keep it as is.
  3. Soak Saffron: Soak saffron threads in 2 tablespoons of hot milk and keep aside, so that its color and aroma come out properly.
  4. Thicken Milk: When the milk is cooked to about one-third or half (it becomes a little thick), then add grated or roasted cheese to it. Mix it well and let it cook for 5-7 more minutes on low flame.
  5. Sugar and Flavors: Now add sugar, soaked saffron milk and cardamom powder into it. Mix everything well and cook until the sugar dissolves and the kheer thickens a little (about 5 minutes).
  6. Dry Fruits: Add chopped mixed dry fruits into it. Save some dry fruits for garnishing.
  7. Turn off the flame and cool: Remove the kheer from the flame. It can also be served hot, but Paneer Kheer tastes more delicious cold. Let it cool at room temperature for some time, then keep it in the refrigerator to cool for at least 2-3 hours.
  8. Serve: Serve chilled Paneer Kheer garnished with remaining dry fruits and a few saffron threads.

Bus! Your Shahi Paneer Kheer is ready. Enjoy this delicious and healthy sweet on Diwali. This is an easy sweet recipe, which you can make on any special occasion apart from festivals.
