News India Live, Digital Desk: As the temperature is rising, the fear of things kept in the kitchen getting spoiled has also increased. The biggest challenge for housewives during the summer season is to keep milk safe. Many times, despite keeping it in the fridge or due to power cut, the precious milk curdles, which not only causes financial loss but also spoils the enjoyment of tea and coffee. If you are also troubled by this problem, then do not panic. There are some ‘Kitchen Hacks’ tried by our elders, by adopting which you can keep milk fresh for a long time even in scorching heat. Let us know 5 surefire ways to prevent milk from curdling.
1. Miracle of baking soda: Stop it before it bursts
The oldest and most effective way to prevent milk from curdling is baking soda (sweet soda). If you are afraid that the milk may get spoiled due to heat, then just add a pinch of baking soda to the milk while boiling it. It balances the acidity of milk and prevents it from curdling. Keep in mind, add soda in very small quantity so that the taste of milk does not change.
2. Repeated boiling technique
It is not enough to boil milk just once in summer and leave it. According to experts, milk should be boiled thoroughly once every 5 to 6 hours. Boiling destroys the bacteria growing in milk. Instead of covering the milk immediately after boiling, cover it with a mesh lid so that steam can escape and the milk cools down quickly.
3. Use of cold water vessel
If you do not have a fridge in your house or the lights have gone off, take a big vessel and fill it with cold water. Now keep the milk vessel in the middle of that cold water. The coolness of the water will not allow the temperature of the milk to rise and it will remain fine for a long time. Keep changing the water in the vessel from time to time so that it remains cool.
4. Use of ‘cardamom’ while boiling milk
Cardamom not only enhances the taste of milk, but the natural elements present in it also protect the milk from spoiling quickly. While boiling milk, add 1-2 crushed green cardamoms into it. This keeps the milk fresh and does not curdle quickly. This method is especially best for those areas where there is extreme heat.
5. Special attention to cleanliness of utensils
Often the reason for curdling of milk is not heat, but dirtiness of the vessel. Always use a completely dry and clean vessel to boil milk. If there is even a slight sourness or cream from the old milk in the vessel, the new milk will curdle immediately. It is better to rinse the vessel once with cold water before adding milk.
