Material:

Poha (Chivda) – 1 Cup
Semolina (rava) – ½ cup
Boiled Potatoes – 2
Finely chopped onion – 1
Green Chilli – 2 (Finely chopped)
Ginger – 1 inch (grated or finely chopped)
Green Coriander – 2-3 tablespoons (finely chopped)
Lemon juice – 1-2 tablespoons
Salt – as per taste
Red chili powder – ½ teaspoon (or to taste)
Garam Masala – ½ teaspoon
Oil – to fry

How to make:

Preparation of poha and semolina: First of all wash the poha and soak it in a vessel for 5 to 10 minutes, so that it softens and mashes. Now take a semolina in another bowl and add so much water to it that the semolina gets wet, leave it like this for 5 minutes.

Mash potato: Peel the boiled potatoes and mash it well, remember that there should be no kernels in it.

Mix material: Mix the poha, semolina and mashed potatoes soaked in a large pot or bowl.

Spices and vegetables: Now add finely chopped onion, green chillies, grated ginger, finely chopped coriander and lemon juice. Also, add salt, red chili powder and garam masala and mix all the ingredients well, like you knead the dough. The mixture should be one.

Cutlet Size: Now apply some oil on your hands, so that the mixture does not stick. Take small dough (ball) from this mixture and give the desired shape of the cutlet (round, flat or any size of your choice).

Frying process: Heat oil in a pan. When the oil is hot, fry the cutlets on medium flame till they become golden and crispy. If you have an air fryer, then you can air the cutlets in it too, it will be made in less oil and will look equally tasty.

Serve: Hot crispy poha-suji cutlets are ready! Serve them with your favorite sharp green chutney or tomato sauce and enjoy the monsoon.
