Often children or adults start frowning at the sight of ‘green lentils’, but when you serve it crispy and spicy in the form of appe, they will not get up without emptying their plate. It requires very little oil, hence it is best for heart health also.

What is needed in the kitchen? (Material)
First of all let’s collect the items:
- Green Moong Dal (peeled): 1 cup (soaked overnight or 4-5 hours)
- Ginger-Green Chilli: As per taste (for grinding)
- onion: 1 medium (finely chopped)
- Green Coriander: a handful
- Vegetables (optional): Grated carrots or capsicum (this is a good excuse to get kids to eat vegetables)
- Salt and Asafoetida: as per taste
- Eno (Fruit Salt): Half spoon (so that the appe becomes puffy)
- Oil: A little bit to put in the appe pan.
Easy way to make (step-by-step)
Step 1: Grind the lentils
Drain the water from soaked moong dal. Now add lentils, green chillies and a small piece of ginger in the mixer. Add a little water and grind it coarsely. Keep in mind that neither should it be made into a very fine paste nor the solution should be diluted too much. Keep it thick like idli batter.
Step 2: Spices and Vegetables
Now take out the ground lentils in a vessel. Add finely chopped onion, coriander, salt, a pinch of asafoetida and vegetables of your choice to it. If you want, you can also add red chili powder and a little cumin.
Step 3: That Secret Trick
When you are completely ready to make the appe (the pan has been placed on the gas), then add the batter to the ‘eno’ Add and mix gently. This will make your apples soft and spongy like cotton. If you do not want to add eno, then beat the dal well while grinding it to add air to it.
Step 4: Bake the Appe
Place the appe maker (Appe Pan) on the gas and apply a little oil in each dish with a brush. Now fill the batter in the grooves with a spoon. Keep the flame low (low-medium) and cover with a lid.
After about 2-3 minutes, remove the lid and see that the appe will have become golden and crispy from the bottom side. Now turn them with a spoon and cook from the other side also.
