1. Sheer Khurma
This is considered to be the most important and essential dish of Eid. ‘Sheer’ means milk and ‘Khurma’ means dates.
Method of preparation: Boil the milk until it thickens, add roasted fine vermicelli, sugar, lots of dry fruits (almonds, pistachios, cashews) and dry dates (dates).
Tip: Garnish it with saffron and cardamom, its taste will double.
2. Shahi Tukda
As the name suggests, it is a ‘royal’ dessert with its roots dating back to the Mughal era.
Method of preparation: Cut the bread slices into triangular pieces and deep fry them in desi ghee until golden. Then dip them in syrup and apply thick rabri and silver work on top and serve.
3. Kimami Vermicelli (Kimami Sewaiyan)
It is different from Sheer Khurma as it mainly uses sugar syrup (Kimam) instead of milk.
USP: In this, roasted fine vermicelli is cooked with sugar syrup, khoya (mawa) and dry fruits. It is quite rich and sweet in taste.
4. Phirni
Cold Phirni cooked in earthen bowls has a different taste.
Method of preparation: Ground rice is cooked with milk and sugar on low flame until it becomes thick. Adding rose water and saffron in it gives an excellent aroma.
5. Muzaffar
It is a type of sweet pulao which is very popular especially in Lucknow and Hyderabad.
Method: Basmati rice is cooked with saffron colour, sugar and ghee. A generous amount of mawa and dry fruits are added to it which gives it a very royal look.

Fry dry fruits: Instead of adding raw dry fruits, lightly roast them in ghee, this will increase the crunch and aroma.
Slow flame magic: Always cook milk-based dishes on low flame so that the natural sweetness and caramelization of the milk comes out.
