Chutney has a special place in Indian catering. The taste doubles due to a little chutney mixed with food. You must have eaten different types of chuttis, but have you ever tried walnut chutney? Ingredients to make walnut sauce:
- Walnut kernel: 1 cup (about 100 grams)
- Onion: 1 (chopped into thick pieces)
- Green Chilli: 1-2
- Garlic: 10-12 buds
- Ginger: A small piece
- Green Coriander: A handful
- Mint: A fist
- Cumin: 1 teaspoon
- Whole Black Pepper: 4-5
- Kashmiri Red Chili: 1 teaspoon
- Coriander powder: 1 teaspoon
- Garam Masala: 1 teaspoon
- Curd: 1/4 cup (as per taste)
- Salt: as per taste
- Water: As required
Method of making walnut sauce:
- Soaking: First of all, soak walnut kernels in light warm water for overnight. You can also make it without soaking, but soaking it balances its effect.
- Mixing: Add walnuts, green chillies, chopped onions, garlic buds, ginger pieces, coriander and mint in a mixer. Also add whole cumin and black pepper. Add a little water to it and grind it well so that a thick paste is made.
- Masala mix: Remove this paste in a bowl. Add Kashmiri red chili, coriander powder, garam masala and salt and mix well.
- Curd mix: Remove the sauce you want to use immediately and add curd according to your taste. If you like thick chutney, add less yogurt, and add more yogurt for thin sauce. If you do not like yogurt, you can use lemon or mangoes.
- To serve: Serve this sauce with roti, paratha, dal-rice or any other dish and enjoy it
